How do I put the tractor in low gears the high gear

Question for you, Do you have to start from the first gear? Or can you start directly in the 2nd or 3rd? If you start in the 2nd or 3rd, how can you prevent from it jumping forward too fast - put the throttle low and then ease it higher? I'm volunteering at an event where I have to use their Farmhall to tow a trailer full of passengers to and from a parking lot, and want to figure out how to use the throttle-clutch-gear system ahead of time. I know I will need to accelerate to 10-15MPH for the straight shots, but want to figure out how to reach those speeds once leaving the passenger pickup areas.
